Hey everybody!

The beach is one of my all-time favorite parts of summer- good thing we live in Southern California, huh? Because of my deeply ingrained love for the ocean, I decided to pick out some things that would be perfect for a day at the beach. Hope you enjoy it!

Isn’t this an adorable combination? Target has the best mix and match pieces, and this is one of the many possible, adorable combos. I love the straps on the bikini top- they add some interest to the simple black.

Smocked Linen Shorts

I bought these shorts at Kohl’s a couple of weeks ago and, oh my gosh, they are amazing. They basically feel like you’re wearing pajama shorts (in the best way possible). I’ve gotten a ton of compliments on them too- which is weird considering that they’re just a pair of navy shorts.  I couldn’t recommend them more- I absolutely adore them.

Sometimes, Music Speaks Louder Than Words

I’m the type of person who constantly has music playing- there’s something about music that I just connect with. I honestly think that if I could sing/I had any type of musical talent, I’d want to pursue a career in music. But since I don’t have either of those things, I just listen and enjoy it, which is more than all right with me.

Sweet Potato and Zucchini Frittata

My Daughter and I- Sweet Potato and Zucchini Frittata

We are finally getting a few veggies from our garden- for some reason our garden this year has been really disappointing, but I was able to harvest a few zucchini the other day. I also had some leftover roasted sweet potatoes that had a bit of sausage in it. I sliced up the zucchini and reworked our original frittata recipe – here are the delicious results.

My Daughter and I- Sweet Potato and Zucchini Frittata 2

Frittata
2 T olive oil

1 1/2 zucchini, sliced

Approximately 2 cups of some sort of potatoes; if frozen, thaw a bit. If raw, cook in microwave a bit before.

10 to 12 eggs, beaten

1 1/2 cups cheese, grated. Use whatever kind you like. I had some Colby Jack and some Cotija cheese, which is a crumbly white cheese, made from cow’s milk. It originates from Mexico and has a delicious salty flavor.

Salt & pepper to taste

 

Preheat oven to 375*
In oven proof skillet pour in about 2 T olive oil, sauté sliced zucchini until softened a bit. Add potatoes and heat through. Now it’s time for the eggs and cheese. Crack your eggs into a bowl, using a fork, beat until frothy. Add in the cheese of your choice and mix again. Set aside for a minute. Using a spatula spread veggies out evenly on bottom of pan and now pour in the eggs and cheese. Do not stir. Turn heat up to about medium high and let cook for about a minute, you want the bottom to get a little brown. Now pop the entire pan into the preheated oven and cook for 10-15 minutes. The eggs will puff up a bit. Cook until no longer jiggly, but watch that they don’t get too brown on top. Remove from oven and let sit for a minute or two and then slice into wedges. We served ours with salad and fruit.

National Eclair Day

Happy Friday! Sorry for the lack of blog posts all this week- things have been kind of crazy around here. Last weekend we went to the river (the Colorado river) for some jet-skiing, Sea-doo riding, and wake-boarding fun! Oh, and some guacamole eating too 😉 We got home late Monday night and have been really busy since. So, long story short, posting just didn’t happen. Until now that is!

Did you know that there is a National Eclair Day? I didn’t! June must be the month of “National…Days”. June 1st is National Donut Day. June 3rd is Egg Day. June 6th is National Yo-Yo Day. June 20th is National Flip-Flop Day.  June 21st is World Handshake Day. See what I mean? And, of course, June 22nd is National Eclair Day. And I am so excited about it! In honor of this special day, check out this delicious and easy eclair cake recipe.

Eclair Cake 2 - My Daughter and I

 

There’s something about these pictures that absolutely gets to me- they make my mouth water every time I look at them! And I can promise you that the cake is just as delicious as it looks!

Eclair Cake
Serves: 16
Ingredients
  • Crust:
  • 1/2 cup butter
  • 1 cup flour
  • 1 cup water
  • ¼ tsp salt
  • 1 Tablespoon sugar
  • 4 eggs
  • Filling:
  • 1 8 oz package cream cheese, softened
  • 2 small packages vanilla instant pudding
  • 3 cup milk
  • 8 oz container cool whip for top
  • chocolate syrup for drizzling on top, optional
  • Strawberry or banana slices to garnish on top, optional
Instructions
  1. Preheat oven to 400 degrees. On low heat in a medium saucepan, melt the butter on low. Add water and bring to a boil. Turn off the burner and add flour, salt, sugar and mix into a softball. Let cool for 5 minutes.
  2. Add eggs one at a time and mix in with a fork until incorporated. Spray a jelly roll pan or a 9×13 inch pan with cooking spray. Spread the mixture out on the pan. If using a 9×13, slightly bring the mixture up on the sides. Bake for 25-30 minutes in the preheated oven. The crust will bubble up and the edges will turn slightly brown. Let it cool until room temperature.
  3. For the filling, In a stand mixer or using beaters mix 1 cup of milk with the cream cheese and mix until creamy. Add pudding mix and the rest of the milk and mix well together until creamy.
  4. Spread over the cooled crust. Spread the cool whip on top of the filling mixture. You can top with fresh strawberry slices or bananas if desired. Drizzle with chocolate syrup if desired.

Favorite Recent Beauty Find- L’Oreal Paris Anti-Oxidant Spray

I bought this spray a month or so ago at Wal-mart and love it so far. I’m not totally sure how much “color vibrancy” it adds to my hair, but it smells super good, it makes my hair soft, it helps with frizz and it adds a ton of volume. And it doesn’t get sticky, greasy or weigh my hair down. Since I dyed my hair, I only wash it once every 5 or 6 days, so this spray helps adds some body and life when it’s a little sad looking.

I have the hair color itch- I love the dark red I’ve been dying my hair, but suddenly bright hair is really appealing to me. I’m really hesitant to bleach my  hair because I don’t want to damage it, so the bright hair idea is going to be a bit hard to achieve. We’ll see what I ultimately decide- I’ll keep you all posted on my hair endeavors 😉
